Can I use the size up to fit the entire opening? My current H burner is 48 x 10

Based on your opening size of 53" x 18", I would recommend the CFBH240 or the CFBT290. This burner, the CFBH200 is a little small for that opening size. Not sure what you meant by what the website is recommending.
